½ Small Purple Cabbage, thinly sliced
½ Small White Cabbage, thinly sliced
2 Carrots, peeled and grated
2 Peaches, sliced
4 Apricots, sliced
Small bunch of Spring Onions, thinly sliced
1 Cup of mixed Salad Sprouts
Fresh Coriander, Basil and Mint to taste
Roasted Nuts, optional
Salad Dressing or Mayonnaise to serve
Method:
Place all the salad ingredients into a large mixing bowl and gently toss the salad. Pour the dressing or mayo over just before serving.
