Makes 1 Loaf
1 Cup Frozen Kernel Corn, thawed
2 Cups Self Raising Flour
1tsp. Baking Powder
100gr. Mature Cheddar Cheese, grated
1tsp Fresh Rosemary, chopped
1 Bunch of Spring Onions, green parts only, sliced
1 Cup of Milk
60gr. Butter, melted
Salt & Pepper to taste
Paprika for dusting
Add the corn, flour, baking powder, cheese, herbs and spring onion to a large mixing bowl and stir to combine.
In a separate mixing bowl combine the eggs, milk and seasoning. Once combined, add to the dry ingredients while stirring. Now drizzle the melted butter over and stir until well combined.
Spoon the mixture into a prepared bread pan, sprinkle with some paprika and place in a pre-heated oven of 180ºC for 60 minutes.
Allow to cool for a few minutes before turning out.
Great served with scrambled eggs and boerewors!
