Marinated Spatchcock Chicken

1 whole Chicken, spatchcocked

2Tbsp. Olive Oil

Juice of 1 Lemon

Pinch of Black Pepper & Salt

1Tbsp. Honey

2 Sprigs of Rosemary, chopped

1 Clove of Garlic, crushed and chopped

1Tbsp. Mustard

Place all the ingredients, except the chicken, into a mixing bowl and stir to combine. Pour the mixture over the chicken and allow to marinate in the fridge for a few hours or preferably overnight.

Braai till cooked or oven roast at 180ºC for about an hour (depending on the size of bird).
