200gr. Butter
200gr. Sugar
Zest of 2 Lemons
3tsp. Thyme Leaves, chopped
3 Eggs
200gr. Cake Flour
1tsp. Baking Powder
30ml. Buttermilk
Syrup:
50gr. Sugar
Zest and Juice of 1 Lemon
2tsp. Thyme Leaves, chopped
50ml. Water
Method:
Start by mixing the butter and sugar together in the mixing bowl of an electric mixer until light and creamy. Add the lemon zest and thyme leaves, mix for a few seconds and then add the eggs one at a time.
Start adding the flour and baking powder and mix until a smooth dough forms.
Pour the dough into a small loaf tin lined with baking paper.
Bake in a pre-heated oven of 175ºC for 45-60 minutes.
To make the syrup, place all the ingredients into a small saucepan and bring to the boil while stirring to dissolve the sugar. Remove the syrup from the heat while the loaf bakes.
When ready remove the loaf from the oven and pour the syrup over the warm loaf. Allow to stand for 10 minutes before gently removing the loaf from the tin.
Once much cooler you can remove the baking paper.
