Hummus with Artichoke

2 Tins of Chickpeas, rinsed

1 Tin of Artichoke Bottoms, drained and halved

3Tbsp. Tahini Paste

2 Cloves of Garlic, peeled & crushed

1Tbsp Garam Masala powder

½ cup of Vegetable Oil

Juice of 1 Lemon

Approx. ½ Cup of Water

Salt & Pepper

 

To serve:

A selection of Flat bread

Vegetable Crudités

 

Method:

Place the chickpeas into a food processor fitted with a metal blade. Add the garlic, garam masala, lemon juice and tahini paste – and start mixing.

With the motor running, add the oil in a steady stream followed by just enough water to give you a soft spreadable consistency. Season with the salt & pepper and more lemon, if you wish.

Spoon the hummus into a bowl and serve on a platter with flat breads & crudités.
