Sweetcorn Chowder

Makes 1 Loaf

2 Cups Plain Flour

1 Tbsp. Baking Powder

3 Eggs

100ml. Olive Oil

250ml. Milk

1 tsp. Black Pepper

200gr. Feta Cheese, crumbled

100gr. Gruyere, grated

1 Tbsp. Mint Leaves, chopped

1 Tbsp. Fresh Rosemary, chopped

1 Tbsp. Chives, chopped


Preheat the oven to 180ºC.

Sift the flour and baking powder into a mixing bowl.

In a separate bowl mix together the eggs, milk and oil. Add the cheeses and herbs and stir through.

Stir the wet ingredients into the flour mixture until smooth. You want to have a soft dropping consistency.

Spoon mixture into a prepared loaf tin and bake for 50-60 minutes or until a skewer comes out clean.

Allow to cool in the tin for 5 minutes before turning out – and allow to cool completely.
