430gr. Cake Flour
420gr. Castor Sugar
6Tbsp. Cornflour (Maizena)
2tsp. Bicarbonate of Soda
150ml. Sunflower Oil
30ml. Apple Cider Vinegar
2tsp. Vanilla Paste
2 cups Orange Juice
Zest of 4 Oranges
Mix all the dry ingredients together in a large mixing bowl.
Now mix all the wet ingredients together, including the orange zest, in a mixing bowl and whisk briefly to combine the ingredients.
Gently pour the wet ingredients into the large mixing bowl with the dry ingredients and stir until you have a smooth batter.
Pour the batter into two prepared cake tins and bake in a pre-heated oven of 180ºC and bake for 40 minutes or until done.
Remove the cake from the oven and allow to cool for 10 minutes before you remove them from the cake tins. Place them on a cooling rack and let them cool completely.
Decorate the cake with fresh berries and a lemon or orange drizzle to keep it egg-free or finish off with a frosting of your choice.
