Bircher Muesli

1 Cup Raw Rolled Oats

1 Cup Apple Juice

½ Cup Plain Yoghurt

¼ tsp Cinnamon Powder

4 Apricots, halved with pips removed

2Tbsp. White Sugar or Honey

1tsp. Vanilla Paste

Squeeze of Lemon Juice

Selection of fresh Berries

Roasted Almonds, roughly chopped

Selection of Seeds for sprinkling

Method:

The night before serving, place the oats & apple juice into a mixing bowl, stir together and cover with cling film. Refrigerate overnight.

The next day place the apricots on a baking sheet in a roasting pan and drizzle with the honey (if using), lemon juice and vanilla paste. Gently stir to make sure the apricots are well coated. Place the roasting tin in a preheated oven of 180ºC for 10-15 minutes, depending on the ripeness of the fruit. Remove from the oven and allow to cool slightly.

Remove the bowl with the soaked oats from the refrigerator, uncover and stir in the yoghurt and cinnamon powder. Spoon a portion into your serving bowl and garnish with the roasted apricots and mixed berries. Sprinkle with the almonds and selection of seeds. Drizzle with some of the juices from the roasting tin and serve.
