125g Butter, softened
1 cup Brown Sugar
1tsp Vanilla Extract
2 Eggs
2 cups mashed Banana
½ cup Hazelnuts, roasted & chopped
100gr. Dark Chocolate, chopped
255g Cake flour
1tsp Baking Powder
1tsp Bicarbonate of Soda
1tsp. Cinnamon Powder
2Tbsp. of Plain Yoghurt
½ Cup of Honey
Chocolate Ganache for garnish
Chopped Hazelnuts for garnish
Method:
Start by whisking the butter and sugar together until light and creamy.
Now start adding the eggs one at a time.
Sift together the flour, cinnamon, baking powder and bicarbonate of soda.
Add half the flour mixture to the mixing bowl followed by the banana puree, yoghurt & honey. Now mix in the rest of the flour until you have a smooth batter. Finally add the chocolate, honey & hazelnuts and stir to combine.
Pour the mixture into a baking tin lined with baking paper.
Bake the loaf at 160ºC for 70 minutes or until done when tested with a skewer.
Allow the loaf to cool in the tin for 10 minutes before turning it out onto a cooling rack to cool completely.
Drizzle with chocolate ganache and sprinkle chopped hazelnuts over.
Thanks Chris for such a diverse range of recipes. Though I am Vegan, there are few I can use by adapting dairy for Soy, and eggs with ‘Flax eggs’. which makes it more interesting. Maybe you can do on you next TV show Vegan recipes that you have concocted using Fry’s range of products.
